Here is a good recipe for making your own tortilla chips for dips like guacamole, and salsa. Take corn or flour tortillas and cut them into triangles. Then put oil in a pan and fry the pieces of tortilla until they are crunchy like chips. When they are crispy drain them on a paper towel and season with salt. That is all you need to do to make your own tortilla chips. Enjoy!

Fried BQQ Chicken Sandwich
This is a great recipe to make when you have leftovers. I had leftover fried chicken that I had and I wanted to use it in an effective way. I heated up the fried chicken strips and toasted two pieces of bread. I then put the heated up chicken on the bread with barbecue sauce and cheese. I let the cheese melt in the toaster oven. This is an effective way to use leftovers which cannot be used to make a full meal. Enjoy!
Breakfast: Take Three
One day I was surfing the internet and food a recipe for barbecue and eggs. This combination seemed strange and odd, yet I was game. I had some leftover chicken from my roasted chicken so I used that. I then used the barbecue sauce to make it barbecue and eggs. In a pan, I heated up the chicken with the barbecue sauce. Once it was heated through I added two eggs to make a barbecue omelet. It was delicious and I think people should try it. It was also an effective way in which I used my leftover chicken. Enjoy!

Matzah Ball Soup: Jewish Penicillin
Chicken Soup has been known to be comfort food at its best. One of the great things about Passover is the Matzah Ball Soup. It is classic comfort food for me. It is always a good choice whenever sick. A bowl of this will make you feel a lot better. Matzah Ball soup is sort of like Jewish chicken and dumplings, but in my opinion better. Here is the recipe for it that my mom uses and gave me to take back to school.
Matzah Balls with Club Soda
2 eggs
1/2 cup matzah meal
salt and pepper to taste
2 tablespoons of oil or chicken fat if possible
2 tablespoons club soda
mix all of the ingredients together. After mixed together, refrigerate for 20 minutes. Bring a pot of water to a boil and drop the matzah balls in the boiling water. Cook at a boil for 20 minutes and they should be done.
Chicken Soup
4-5 pound chicken
1 diced onion
3 large carrrots peeled and quartered
3 stalks of celery
1 clove garlic
4 sprigs of parsley
1/8 teaspoon of dill
1 tablespoon salt
pinch of sugar
1/2 tablespoon of pepper
Put enough water over chicken to cover it. When it boils, skim and add vegetables.
Simmer until chicken is tender, about 2 ½ hours. Taste and add salt and pepper if
necessary. If flavor is not strong enough add a package of broth seasoner. Strain.
To prepare a boil of matzah ball soup, I usually use the carrot and celery from the broth along with the chicken. I put the veggies, chicken, and matzah balls. I usually have to put some salt to taste. It is delicious and it will revive you if you are feeling sick. ENJOY!

Passover Delights: mandelbread, passover biscotti
So I know that it is Easter, but it is also Passover. Mandelbread or Mandelbrot is a special passover cookie. It is very similar to a biscotti in that they are both baked twice. These a favorite of mine. Here is the recipe courtesy of my mom. 4 egg
1 1/2 cups matzah meal
1/2 cup matzah cake flour
1/4 potato starch
3/4 white sugar
1/4 brown sugar
1/2 cup oil
1 tsp vanilla
1/4 tsp salt
1 or more tsp cinnamon
1 cups chocolate chips, nuts and raisins
Mix all together. Spread evenly into 2 long shapes on a cookie sheet. You should flatten as much as possible. Bake for 20 minutes at 350 degrees Farenheit. After 20 minutes remove and slice while they are hot. You should turn off the oven here. When the mandelbread has been sliced return to the turned off oven for 10 minutes. Remove after ten minutes.

Simple Roasted Chicken
Roast Chicken might be one of the best comfort food meals for me. As a kid, most Friday nights revolved around the kitchen table eating roast chicken my mom would make. The house would smell wonderful with the smell of chicken and aromatics. This is a perfect dinner for a crowd, or if you are looking for a good Shabbat dinner.
Here is the ingredient list:
A whole roaster chicken
4 carrots
4 stalks of celery
two onions
the zest of a lemon and the rest of the lemon
2 tablespoons of garlic powder
2 tablespoons of paprika
3 sprigs of rosemary
2 tablespoons of thyme
2 tablespoons of parsley
1 tablespoon of marjoram
1/3 cup of canola oil
2 teaspoons of salt
2 teaspoons of pepper
Method:
In a pan, place two of the carrots, one sliced onions, and two stalks of celery. Place the chicken on top of the vegetables. In a bowl mix the rosemary, the lemon zest, half of the paprika, half of the garlic powder, half of the thyme, half of the parsley, half of the marjoram, half of the salt, and half of the pepper. Place this mixture underneath the skin of the chicken. This will help flavor the chicken. In another bowl, place the oil with the rest of the herbs and spices. Mix the herbs and spices with the oil so that it makes a paste. Then spread the paste over the sin of the chicken evenly. With the rest of the carrots, onions, and lemon place it inside the cavity of the chicken.
Place the chicken in a 375 degree Fahrenheit oven for 30 minutes. After 30 minutes put the heat up to 405 degrees Fahrenheit. Then after another 30 minutes push the heat up again to 420 degrees Fahrenheit. Once the chicken has cooked for 30 minutes at 420 degrees Fahrenheit, the chicken should be done. Take out the chicken and make a foil tent and place it on top of the chicken. Let the chicken rest at room temperature for at least 20 minutes. This will allow the chicken to be juicy and delicious. This is is a simple and delicious recipe if you follow the recipe. Try it out you will not regret it. Enjoy!

Fried Chicken: Part Two
I have shown you that you can make fried chicken using Shake and Bake. Now I will show you how to make fried chicken using regular potato chips instead of bread crumbs. For this you will need flour, an egg, salt, pepper, garlic powder, hot sauce, chicken, and of course the potato chips. Make sure that the potato chips are crushed small enough to coat the chicken. First take the chicken and cut into strips. Then prepare a breading station. Place the flour in one bowl with garlic powder, salt, and pepper. In another bowl crack and egg and scramble with some water. In the third bowl put the potato chips. When the chicken is cut into strips take the chicken and coat it in the flour, then the egg mixture, and finally the crushed potato chips.
Once the chicken is breaded, fry the chicken strips in a frying pan with oil. In this case I pan fried the chicken so use enough oil. So once it has browned on the first side flip till that side is done. For a side dish I made stir fried vegetables. I used onion, mushroom, green beans, and broccoli. For the sauce I used soy sauce, sesame oil, sesame seeds,and hot sauce. Enjoy!
