Cheese Blintzes

Cheese Blintzes are an Eastern European Jewish style of stuffed crepe. They are usually stuffed with a sweet cheese mixture of  cottage cheese, sugar, eggs, sour cream, and other special seasonings. Others are stuffed with fruit such as apples or mixed berries. The kind that I had were cheese filled. They were already prepared and I all I had to do was reheat them in the toaster oven. At 400 degrees Fahrenheit I cooked them for 10 minutes. Then after 10 minutes I turned them and cooked them for an additional 3 minutes. On the side I served the blintzes with macerated strawberries. This recipe is really easy.

Macerated Strawberries:
A box of Strawberries
a teaspoon of vanilla extract
2 tablespoons of powdered sugar.

Method:
Slice the strawberries and mix them with the sugar and vanilla extract in a bowl. Mix until all of the powdered sugar is dissolved. Then put in the refrigerator and it will keep for about a week if you don't eat all of it before then.
