I love Mexican food, and not that fake crap that Americans
think is Mexican food. Fajitas do not exist in Mexico as I have learned from my
Mexican friends. What I am
trying to say is that if you think Taco Bell, Chipotle, Moe’s, or Qdoba is
Mexican food well you are dead wrong. What Americans think is Mexican is really what is called Tex-Mex. In a word Tex-Mex is Americanized Mexican food. Just like the crappy Chinese take-out we all love is not really authentic Chinese food.
Most of my friends from Mexico come from a city called
Puebla. Puebla is known for a dish called mole poblano. Mole Poblano is a very labor intensive dish which takes a very long time. As a college student, I don't have the time to make Mole from scratch. Conveniently at the Latin market near campus has mole available in a pre-made paste that you just have to dissolve in water and cook for a while until it gets to the right consistency. Along with the mole sauce i cooked chicken thighs cut into strips. I cooked the chicken with onion, garlic, salt, pepper, jalapeno, and cumin. When the sauce and chicken were both ready, I took corn tortillas and submerged them in the sauce and filled the tortillas with the chicken and some cheese. The end result was chicken mole enchiladas, or enmoladas. Try it out sometime, its delicious and might broaden your horizon to Mexican cuisine.
