Empanadas

I love empanadas. They are like Hot Pockets without being frozen and regretting eating them. Making empanadas were really easy because there is a Latin market in the Main South called Santiago's which has everything you need. I found empanada dough already made there. They came frozen in disks already. So with the empanada dough thawed out I made a filling.


For the filling I used cooked bacon, shredded cheddar cheese, and sauteed onions, garlic, and mushrooms.


For filling the empanadas, I did not overstuff them with the filling. Fold over the dough so it forms a half moon. Then pan fry in oil until both sides are golden brown and delicious. You can fill them with any mixture you want. You can make dessert empanadas with cooked down apples, sugar, cinnamon, and nutmeg. You can also make chocolate filled empanadas with Nutella.
