Sausage with sauteed peppers and onions is a classic combination. The smell of it is intoxicating and the smell reminds me of going to baseball games at Fenway Park. Outside the park, there are vendors who will serve you an Italian sausage sandwich with peppers and onions. This creation is my homage to the sandwiches I ate before going into Fenway. I added potatoes to the dish to add some bulk to the meal. Instead of using Italian pork sausage, I used chicken sausage because it is much more healthy for you than using pork sausage.
For the potatoes, I cut them into wedges and cooked them in boiling water for about 15 minutes until they were tender before I added them to the frying pan to get crispy.
For the onions and peppers, I sauteed them in some oil in a frying pan. I used a combination of green and red peppers. After two minutes of cooking, I added the chicken sausage to the onions and peppers. About two minutes before everything finished cooking, I added some oregano and chopped garlic. I ate the sausage with peppers and onions on a flatbread. It was delicious and you can serve it with a side of pasta. It was delicious and its easy to make.
