More Enmoladas and enchiladas

Enchiladas are a favorite meal of mine because it is pretty easy to make. I first cut up some chicken thighs into cubes. I chopped onions and garlic and cooked the chicken with the onions and garlic. When the chicken is almost done I added some salsa and water to the pan and put the lid on so it could finish cooking. I used regular salsa and salsa verde to create a sauce for the enchiladas. I also made some mole sauce for a couple of enmoladas.


For the enchiladas, warm the torillas in the toaster oven works best for me. When the tortillas become pliable I add some cheese and the chicken mixture and wrapped them. Then I placed them in a casserole dish.  Once they were in the casserole I covered them with the sauces. I made 2 red enchiladas, 2 green enchiladas, and 3 enmoladas. I topped them with cheese and set the oven to 400 degrees Fahrenheit.

I then baked them for 10 minutes. They were delicious and If you have leftover sauces and tortillas it is easy to make again. They are very good with a side of rice and beans. Even a salad would be good with these. They are a great way of using tortillas and its a great way of making a chicken dish. You basically can never have too many of those.
